Meet a successful pastry chef with diabetes
A young 21-year old diabetic Darko Sušenka is a pastry chef. He was diagnosed with diabetes at the age of 9. He remembers that it was not at all easy at the beginning. Many were amazed when they heard what type of a rewarding career he chose and tried to talk him out of it. However, Darko always knew what he wanted to be in life. He enrolled in a catering school and was the best in his generation of pastry chefs.
Behind him are prestigious awards and competitions.
Nowadays, he volunteers at the Association of Young Diabetics Osijek MADI, where he cheers up young members by preparing all sorts of treats adapted to the needs of diabetics. He wants to tell young people that diabetes is not an obstacle for anything in life, that they should do what they love and follow their dreams, while not minding other people’s opinions.
Although it is not Christmas time, that shouldn’t stop us from trying Darko’s excellent recipe which will, we believe, sometimes find its way onto your table as well.
- 600 grams of almond flour
- 2 eggs
- 200 grams of birch sugar (it can be stevia or erythritol as well)
- 250 grams of butter
If you wish, add cinnamon, chopped chocolate and nuts.
You should mix all the ingredients. Wrap in foil and leave the mixture for an hour in the refrigerator. After that, you should roll it out, shape little stars, moons, circles (let your imagination run away). Bake at 180 degrees on a baking paper until they become golden.
